Блины /Bli’ni/ -pancakes, crêpes

This week we are celebrating Maslenitsa, a traditional Russian holiday, which marks the end of winter and greets the advent of spring. The essential treat of this feast is blini. In pagan times they were viewed as the symbol of the sun due to the round form.
Blini can be compared with thin pancakes or crepes where yeast is added. There are lots of recipes of blini's batter (buckwheat, wheat, oatmeal blini) and numerous fillings (cabbage and onions, potato, cooked ground meat or chicken, cottage cheese etc). They can be also served with sour cream, jam, honey, caviar or smoked salmon.
